Beginning in the 1880s, Golden Age bartenders started reaching for Champagne when preparing their cocktails. A dose of bubbles in a proper Cocktail—such as the Manhattan—became commonplace.

The Prince of Wales is an original creation of its namesake and a type of “improved” Cocktail, with hints of fresh pineapple. The addition of a Champagne-style sparkling French wine turns a good cocktail into a great one.
