Prince of Wales

tropical fruit, citrus, eucalyptus, bubbles
kentucky rye whiskey, pineapple gomme, lemon, maraschino, bogart bitters, orange bitters, blanquette de limoux sparkling wine

Beginning in the 1880s, Golden Age bartenders started reaching for Champagne when preparing their cocktails. A dose of bubbles in a proper Cocktail—such as the Manhattan—became commonplace.

The Prince of Wales is an original creation of its namesake and a type of “improved” Cocktail, with hints of fresh pineapple. The addition of a Champagne-style sparkling French wine turns a good cocktail into a great one.
