Charles Dickens’ Famous Smoking Bishop

Immortalized at the end of Charles Dickens’s beloved holiday story, A Christmas Carol, the Smoking Bishop is a mulled and spiced port wine punch popularized centuries ago. We roast whole, clove-studded oranges in the oven until their bursting point, juice them, then fortify the juice with sugar and spices to create a cordial. Picon adds a bittersweet fruitiness to the port wine, which we heat until “smoking.” Served hot.
